Indian Spiced Sweet Potato Fries
**You can use less spices if you prefer, but we like ours SPICY!!**
6 large sweet potatoes
2 Tablespoons olive oil
1.5 teaspoons Garam Masala
1.5 teaspoons Cumin
1.5 teaspoons Coriander
1.5 teaspoons Curry
3/4 teaspoon Tumeric
1/2 teaspoon sea salt
1/2 teaspoon fresh cracked pepper
Preheat oven to 400. Peel sweet taters, wash and dry then chop into fingers. Put into large bowl drizzle with olive oil, then sprinkle in spices, tossing well to coat. This can be done in 2 steps if you like. Put on 2 parchment paper lined cookie sheets and bake for about an hour, turning every 15 minutes, until fries are golden and crispy on the edges.
Just keep testing them til they are of your desired doneness! ENJOY!!!
